Traditional vinif ication
Mecanical picking starting mid September.
The berries are gently pressed in an airbag press. The press is operated at a very slow speed to avoid extracting any bitter oils from the seeds.
Only the free run juice and that of the first pressing is used. Following clarification, the juice is fermented to extract fruit and body, and a light filtration. The wine is bottled 6 months after the harvest.
