CHARACTERISTICS OF DEGUSTATION

On view: intense garnet red with orange reflections.

Nose: we can feel immediately the aromas of cherries in alcohol, plum and wild rose jam; with the ageing time prevail sensations of tobacco, tar, chocolate and a particularly appealing note of undergrowth and truffles.

Palate: a very refined and balanced taste, younger brother of the Barolo Bussia with a marked elegance from the first years of the ageing.

It’s advisable to pour the wine into decanter at least one hour earlier and drink it at 18-20° C temperature.

 

Gastronomic combinations: it accompanies with a great elegance important first courses such as “risotto in Barolo” and the “Agnolotti del plin” (type of pasta “pinched”), it is splendid with the main courses based on red braised meats such as the oven-baked oxtail or roasted calves, stews and stewed fowl. Sublime with porcino mushrooms cooked in olive oil, parsley and garlic. An excellent alternative also with well-aged cheeses such as the cheese “Castelmagno” and the “Grana Padano”.
